Apple Caramel Carrot Cake



Ingredients

Carrot Cake:

  • 3 cups finely grated carrots lightly packed
  • 4 eggs
  • 1 1/2 cups vegetable or canola oil
  • 1 1/2 cups sugar
  • 2 cups all purpose flour
  • 2 tsp baking soda
  • 1 cup caramel apples from below

Apple Filling:

  • 3 tbsp butter
  • 2 1/2 lbs Granny Smith apples peeled, cored, and diced
  • 3/4 cup brown sugar
  • 1/3 cup Dulce de Leche



Frosting:

  • 1/2 cup unsalted butter room temperature
  • 8 oz cream cheese softened
  • 2 1/2 cups powdered sugar
  • 1 tsp vanilla extract

Topping:

  • 1/4 cup Dulce de Leche
  • 1/4 cup Caramel topping
  • 3/4 cup Crushed Pecans optional
